Why two kitchens
Most places pick a side. We ran a Thai stall and a Western stall on the same street for years, and the same people kept crossing the road twice in one meal. So we stopped making them walk.
Two cooking lines, two sets of pans, two pantries. One table, one bill. Order tom yum and dhal together and nobody at the counter blinks.
The coffee and tea counter sits between them and runs all day, which is how most of our regulars start.
